Coffee Can Sweet Bread

A delicious breakfast or dessert bread made with mead and baked in a coffee can.

Ingredients

Scale
  • 1 cup heavy whipping cream
  • 1 cup mead
  • 1/2 cup honey
  • 2 eggs
  • 1 tsp white vinegar
  • 3/ 4 cup vegetable oil
  • 1 cup cornmeal
  • 2 cups whole wheat flour
  • 1.5 tsp baking soda
  • 1 tsp salt

Optional:

  • 1 cup raisins
  • pinch clove and nutmeg

Instructions

  • Boil and flambé mead to remove alcohol, allow to cool.
  • Mix ingredients thoroughly and steam in coffee cans 1 hour 40 minutes in a dutch oven over medium heat.
  • Cool in cans ten minutes, then turn out on cooling racks to cool completely.
  • Slice and enjoy!

Notes

It’s great with a drizzle of honey on top!
